Description
The fully ripened Merlot grapes were hand harvested, at the start of March, from 15 year old vineyards that grow on a north-facing slope. After crushing, the pomace was soaked for one day at 18 degrees Celsius. Once the cultured yeast was added, fermentation took place at approximately 25-28 degrees Celsius. During fermentation, regular pump overs were done to ensure optimum extraction of flavours and colour. After 6 days of fermentation, the grapes were pressed. After the primary fermentation, malolactic fermentation took place. The wine was then matured in small, French oak barrels for approximately 18 months.
With its lucious berry fruit on the nose and flavours of wild plums and soft oak on the palate, our Merlot is a beautiful balanced wine. Enjoy with exotic mushroom risotto, slow-roasted lamb or spiced duck breast.
