The grapes were harvested by hand in February. After gentle destemming and crushing, skin contact took place for up to 6 hours. The grapes were then gently pressed. The free run juice was separated from the pressed portion. Cultured yeast was then added, which enhances the wine’s flavour. After the alcoholic fermentation, the wine was kept in stainless steel tanks. During the month of May, the wine was treated by fining and cold stabilising it to prepare it for bottling. Before bottling, the residual sugar was increased with the addition of grape concentrate.
Off-dry and tropical, this is a Sauvignon Blanc for those who prefer an easier-drinking, fruity white wine. It’s the perfect partner to hot curries and spicy dishes, too!
